King Blue Oyster Mushrooms - Large caps, rich, savory flavor
Lion's Mane Mushrooms - delicate flavor, great with seafood or as a seafood alternative.
Pioppino Mushrooms (AKA Black Poplar), earthy, nutty flavor. Pairs well with herbs
Chestnut Mushrooms (AKA Cinnamon Cap) - smaller caps, firm bite, umami flavor

Recipes
We like to keep it simple. To bring out the natural taste of a mushroom, lightly saute it in a neutral flavored oil till it browns. Stir and add a sprinkle of sea or pink salt.
